Wednesday, Day 117 I had a boiled Vital Farms egg for breakfast with some garden strawberries. Very late lunch at the Triangle Farmer’s Market was a Bison taco from Taco Deli. I was happy to have some time to shop after finishing our garden installation earlier than expected. I got some Kocurek English bacon, Thunderheart Bison steaks, Richardson Farms steaks, some wonderful Milagro Farms onions, which I didn’t need, having harvested lots of my own, but they are so incredible, I couldn’t resist. Dinner was a big salad with Bella Verdi lettuce, onions, boiled egg, Kocurek bacon, and Texas Olive Ranch oil and basalmic.
Thursday, Day 118 – for breakfast, Kocurek bacon and a scrambled egg. I wasn’t hungry for lunch, and for dinner, Thunderheart bison steak cooked in the smoker, with onions sauteed in olive oil and basalmic, and oven roasted asparagus.
