Growing Eggplant is Easy September 27, 2009

I don’t love eggplant.  I think they are gorgeous to look at and they are one of the easiest things to grow, that I’ve ever tried.  I have one plant, that I got from Shady Hollow Farm, and it is so heavy with eggplant I had to put a stake up for it to lean on.  I’ll be perusing eggplant recipes soon, that don’t involve frying.

    I love the coloring on these! I love Chinese-style eggplant; perhaps I should try my hand at growing some.

    Gorgeous eggplant. Love those stripes. Try quartering them the long way, popping them in a pyrex baking pan, coating them in extra virgin olive oil, sprinkling them with sea salt, and roasting them in a 400 degree oven until tender. In my convection bake oven it takes only 10 minutes. Yum. Tastes just as good cold and leftover on a salad the next day too.

    Ratatouille! Great combo of eggplant, onion, tomato, squash, mushrooms, olives — with, of course, garlic, your choice of herbs (basil, oregano, thyme), etc.
